Real preventive maintenance is a systematic check of every component that keeps your equipment running safely and efficiently. When they’re coated in grease, dust, and debris — which happens quickly in a working kitchen — they can’t do that job effectively. The compressor has to work harder to compensate. Over time, that extra strain leads to overheating, premature wear, and eventually compressor failure.
Compressor replacement is one of the most expensive repairs in commercial refrigeration. It’s also one of the most preventable. Regular coil cleaning — at least twice a year, and quarterly for high-volume operations — removes the buildup before it becomes a problem. In a Nassau County catering hall running back-to-back holiday events, quarterly cleaning isn’t excessive. It’s just good math.
The same logic applies to evaporator coils on the interior side of the system. Ice buildup on the evaporator restricts airflow and forces the system to run longer cycles to maintain temperature. If the defrost heater, timer, or termination thermostat is malfunctioning, ice accumulates on the coil over days and weeks. Eventually, airflow is so restricted that the freezer can no longer maintain temperature — and by the time that’s visible to kitchen staff, the problem has been developing for a long time.
